The Head Chef
Winner, MasterChef Singapore 2023
Now leading the galley aboard the Royal Albatross
Food made the way it was taught to him, to be shared.
A New Chapter
The Royal Albatross welcomes Inderpal Singh, the home cook who captured a nation and was crowned MasterChef Singapore 2023, as our new head chef. His arrival marks a new era of dining at sea, where the warmth of a heritage kitchen meets the elegance of Asia's only luxury tall ship.

The Story
Inderpal Singh's love of cooking began at the age of five, watching the elders prepare communal meals in the kitchen of his local gurdwara. It was there, cooking alongside his father, that he learned the values that still define his food: generosity, harmony, and the joy of cooking for others.
A second-generation Singaporean with roots in Amritsar, Punjab, he turned a lifelong passion into a home-based kitchen during the pandemic, serving butter chicken and roti on weekends. In 2023 he carried that heritage onto the country's biggest culinary stage, winning MasterChef Singapore with a finale score of 76.6, on a quiet mission to bring Punjabi cuisine into the limelight.
Calm, humble and exacting, he now brings that same spirit aboard the Royal Albatross, where every plate is composed to be shared beneath four masts and twenty-two sails.
The Craft
Punjabi soul, refined technique, and produce that meets the standard of a tall-ship table. Each course is built in the open galley as the city skyline drifts past.

The Signature

In Command
A champion at the pass, directing a brigade with the same calm focus that won him the title, course after course, sailing after sailing.
